This stunning methode was crafted in honour of Saint Clair matriarch, Dawn Ibbotson, who reached the grand age of one hundred in 2014. Supposedly Dawn swore by this methode and attributes much of her longevity to this delicious drop. We can't attest to its ability to grant immortality, but we can say that this is a truly elegant and delicious wine that represents the very best of New Zealand sparkling wine production. Here's to you, Dawn.
